Smooth and slightly sweet; toasty with a touch of dryness. Best enjoyed with friends. The production of top quality oolong tea is quite complex. Tea stalks are first left in the sun to wither. The leaves are then further withered at room temperature for up to eight hours. Each hour, they are mixed by hand which speeds up the development of their flavors. Once the leaves begin to turn red, they are briefly pan-fired to stop fermentation. Finally the leaves are rolled and dried. The appearance of some stalks and stems in this tea is to be expected.
